Fall Camping, Fall Food | An Ocean Lakes How-To

The air feels crisp, the leaves crunch beneath your feet, even the colors are more appealing, and the food simply tastes better. Nothing beats packing up the camper, loading up the family, and camping during the Fall season. When staying at your happy place this Fall, here are a few campsite meals the whole family will enjoy!


Let’s get started with this full course meal by the campfire | 

Cowboy Caviar – Every meal needs an appetizer and this one will make the whole family say “Yee-Haw!” 

Ingredients: 
3 Roma Tomatoes
2 Ripe Avocados
1 Can Black Beans
1 Can Corn
1 Can Black Eyed Peas
1/3 Cup Red Onion
1 Bell Pepper
1/3 Cup Cilantro
1 Jalapeno Pepper

Dressing:
1 Freshly Squeezed Lime
1/3 Cup Olive Oil
½ Teaspoon Salt
½ Teaspoon Pepper
¼ Teaspoon Garlic Powder


Directions: 
  1. Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss all this goodness really well!
  2. In a medium bowl, whisk together the olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder. 
  3. Simply pour the dressing over the ingredients and stir together.
  4. Serve with tortilla chips and keep refrigerated!
Camping Mac N Cheese – This main meal brings all the warmth and comfort the family needs!

Ingredients:
1 Package Kielbasa Sausage (or your favorite sausage) 
1 ½ Cups Dry Noodles
8-10 Ounces Alfredo Sauce
1 ½ Cups Shredded Cheese Blend
¼ - ½ Cup Milk
Salt and Pepper


Directions:
  1. Slice the sausage into wheels then cook in a cast iron skillet or dutch oven. Drain the grease and set aside.
  2. Cook the pasta, then drain.
  3. Add noodles, Alfredo sauce, cheese, and milk to create the cheesy sauce.
  4. Add your salt and pepper.
  5. Heat on a grate over campfire coals for 5 – 10 minutes and be sure to stir!
  6. Enjoy!

Grilled Pineapple – The simple, perfect sweet treat for all to enjoy!


Ingredients:
1 Pineapple
1 Stick Butter
½ Cup Brown Sugar
¼ Teaspoon Cinnamon
¼ Teaspoon Vanilla Extract

Directions: 
  1. Combine and stir butter, brown sugar, cinnamon, and vanilla extract in a bowl.
  2. Slice your pineapple and dip both sides into mixture.
  3. Place pineapple slices onto grill until grill marks form on both sides.
  4. Use a brush to coat both sides with mixture one more time, while on the grill.
  5. Cook both sides about 2 more minutes, then remove from grill.
  6. Tip: Add a scoop of vanilla ice cream on top and drizzle your favorite sauce, such as caramel, on top.
